Ingredients: 6 Premium Cultured Abalone Whole in shell (rinsed under cold water)
1 clove garlic, sliced
4 slices fresh ginger
1 red chilli sliced
1 tbls sunflower oil
1 tsp sesame oil Salt and pepper to taste
1 tbls mirin
1 tbls light soy
1tbls sliced spring onion
1 bch asparagus
Lightly steam asparagus and cool. Heat sunflower oil in pan, add garlic and ginger and lightly fry Add whole abalone and fry until meat starts to caramelise Reduce heat to min, add chilli and sesame oil. Cook at low heat for 10-20 min until cooked through Finish with mirin, soy and spring onions. Cool slightly, and gently remove meat from shell. Remove gut from meat. Slice and arrange in shell with warmed asparagus.
