Australian Abalone

Ingredients:

6 whole pieces of Ausab frozen abalone meat (thawed)

1 tablespoon olive oil

2 sprigs fresh oregano

Sea salt and freshly ground black pepper

Zest and juice of ½ lemon

20g butter

1 teaspoon finely chopped Italian parsley

12 slices pickled ginger

Sushi (optional)

Slice abalone meat horizontally into 3 to 4 pieces.


Place sliced abalone meat in a medium non-metallic bowl. Add olive oil, oregano, lemon zest and juice, tossing to combine. Cover and refrigerate, allowing the abalone to marinate for at least 30 minutes.

Heat a wok over a high heat and add butter. Once butter has melted add the abalone and marinade.

Cook quickly until just cooked and finish with parsley.

Serve cooked abalone with pickled ginger and sushi.
