Grilled Greenlip Abalone and Seasonal Vegetables
with Sea Urchin Sauce and Liver Sauce
Ingredients:
- Ausab Australian Frozen Greenlip Abalone meat and liver
- Seasonal vegetables
Sea Urchin Sauce
- Uni (sea urchin)
- Shoyu
- Sake
- Mirin (sweet sake)
Liver Sauce
- Abalone liver
- Miso
- Sake
Instructions:
- Thaw, shuck and clean the abalone (keep the liver).
- Boil your chosen vegetables
- Slice the abalone meat and arrange it with the vegetables
- Puree the sea urchin and season with shoyu, sake and mirin
- Blanch and puree the abalone liver, and season it with sake and miso
- Grill the abalone meat and vegetables together
- Serve with the two sauces
